Desde el punto de vista nutritivo el pescado es uno de los alimentos más completos por la calidad y cantidad de los nutrientes que aportan, contribuyendo con el 5,5% de las ofertas mundiales de proteínas y representando el 16% de proteína animal. El objetivo del trabajo fue evaluar física química y microbiológicamente la carne del pescado Caribe colorado (Pygocentrus cariba Humbolt,1821) para su aprovechamiento. Para esta investigación, la materia prima se adquirió en el Mercado de Mayoristas de
Tocuyito, Valencia, estado Carabobo, Venezuela. Los ejemplares fueron transportados bajo refrigeración a los laboratorios de la Universidad Nacional Experimental Simón Rodríguez (UNESR)del núcleo Canoabo, donde se les realizó análisis fisicoquímicos y microbiológicos. Los mismos fueron lavados y eviscerados, se les eliminó la cabeza, escamas, aletas y cola, luego se picaron en troncos y se envasaron en latas de 140 g de capacidad, donde se emplearon dos líquidos de cobertura (aceite vegetal y salsa de
tomate), posteriormente se sometieron al proceso de esterilizaron comercial a 116oC por un tiempo de 60 minutos (min), culminado el proceso, se determinó el tiempo térmico letal (Fo) por el método de adición de Patashnik. Del mismo modo, mediante una prueba de preferencia con un 99,9% de confianza (P<0,01), basado en la distribución “t” de Student fue seleccionada por los catadores la conserva, que tenía como liquido de cobertura la salsa de tomate. Seguidamente a esta conserva seleccionada, se le realizó análisis fisicoquímicos, tanto al día cero como a los 60 d, durante este lapso de tiempo el producto se mantuvo
almacenado en condiciones de anaquel; igualmente se evaluó la estabilidad sensorial del producto cada 20 d por dos meses, para ello se evaluaron los atributos color, olor, sabor y apariencia general. A los resultados de la evaluación sensorial se les aplicó el programa estadístico PASW Statistics en su versión 18.0 con 5% de significancia.

The aim of the work was to evaluate physicist, chemistry and microbiologically the meat of the Caribbean colorado fish (Pygocentrus cariba Humbolt, 1821) for his utilization. For this investigation, the raw material was acquired on the Wholesalers’ Market of Tocuyito, Valencia, Carabobo State, Venezuela. The specimens were transported under refrigeration to the laboratories of the National Experimental University Simón Rodríguez (UNESR) Nucleus Canoabo, where there were realized physicochemical and microbiological analyses. The same ones were washed and eviscerated, there was eliminated the head, scales, fins and tail, then they were stung in trunks and were packed in tins of 140 g of capacity, where two liquids of coverage were used (vegetable oil and sauce of tomato), later they surrendered to the process of they sterilized commercial to 116°C in a time of 60 minutes, reached the process, it decided the thermal lethal time (Fo) for the method of Patashnik addition. In the same way, by means of a test of preference with 99.9 % of confidence (P <0.01), based on the distribution “t” of Student there was selected by the tasters the conserve that took the sauce of tomato as a liquid of coverage. Then the conserve selected, is performed physicochemical analyzes, both day (d) 0 and at 60 d, during this time product remained stored platform condition. Equally the sensory stability of the product evaluated every 20 d for two months, for it the attributes evaluated color, smell, flavor and general appearance. To the results of the sensory evaluation there was applied to them the statistical program PASW Statistics in his version 18.0 by 5% of significance. |
