Obtención de un hidrolizado proteico por fermentación sumergida de plumas utilizando Bacillus spp

Se obtuvo un hidrolizado proteico a partir de la fermentación sumergida de las plumas por una cepa queratinolítica de Bacillus spp designada como LPB-2. El proceso se realizó en condiciones aeróbicas, utilizando un medio salino basal (pH 7,5), suplementado con 20 g/l de plumas molidas y un fermentador de 6 L de capacidad regulado a 40° C durante 26 horas. Mediante alimentaciones semi-continuas de sustrato, efectuadas cada 12 horas, se pudo prolongar el tiempo de fermentación hasta 58 horas. A las 44 horas de fermentación se alcanzó el valor máximo de biomasa (2,34 g/L) y producto de la hidrólisis bacteriana de las plumas, la mayor concentración de grupos amino libres, (32,79 mM). Finalizado el proceso, el caldo de fermentación se sometió a tres métodos diferentes de secado: aspersión, bandeja y una combinación de precipitación con CaCl2 y secado en bandeja. La harina de plumas resultante del método de secado por aspersión presentó el mayor contenido proteico (91,53%). Adicionalmente, la digestibilidad in vitro de este hidrolizado (58%) fue 6 veces mayor que la de las plumas sin tratar y resultó enriquecido en el aminoácido esencial L-lisina (3,1%). La harina de plumas hidrolizadas obtenida por fermentación podría ser usada en la elaboración de alimentos concentrados para animales.

Resumen en otro Idioma | The protein-hydrolysate was obtained by submerged fermentation of feathers using a keratinolytic strain LPB-2 of Bacillus spp. The fermentation was carried out in aerobic conditions with a basal saline medium (pH 7.5), supplemented with 20 g/L of feathers and using a fermenter of 6 L of capacity regulated to 40°C during 26 hours. By means of semi continuous feedings of substrate, carried out every 12 hours, the time of fermentation could be prolonged up to 58 hours. At 44 hours of fermentation, the maximum value of biomass (2.34 g/L) and the greater concentration of free amino groups (32.79 mM), were reached due to the bacterial hydrolysis of the feathers. At the end of the process, the fermentation broth was dried by three different methods: aspersion, drying in trays and a combination of precipitation with CaCl2 and drying in trays. The feather meal obtained by the first method of drying displayed the greatest protein content (91.53%). Additionally, this feather-hydrolysate showed a higher in vitro digestibility (58%) than feathers (6 times) and was enriched in the essential amino acid L-lysine (3,1%). The feather-hydrolysate meal obtained by fermentation may be used in the elaboration of feed concentrates for animals. |
