dc.description.abstract | Se determinó la calidad bacteriológica y el contenido de histamina en tres marcas comerciales (A, B, C) de pescado desmenuzado precocido (mojito) disponible en la ciudad de Maracaibo. Se analizaron 42 muestras (14 de cada marca, tres muestreos), a las cuales se determinó Coliformes Totales (CT), Escherichia coli (EC), Recuento de Aerobios Mesófilos (RAM) y Microorganismos Psicrófilos (MP), según COVENIN; bacterias productoras de histamina (BPH), según Niven modificado por Yoshinaga. Concentración de histamina e histidina, por Cromatografía Líquida de Alta Resolución. El RAM varió entre 4,7 y 7,6 y MP entre 5,6 y 7,9 log UFC/g. Las marcas A y B estuvieron por encima de los límites permitidos por COVENIN y el Servicio Nacional de Pesca de Chile (SERNAPESCA). Los valores de CT variaron entre 2,3 y 2,8 log NMP/g, las tres marcas sobrepasaron los límites establecidos por ERNAPESCA. En las marcas A y B se aislaron EC, en límites inferiores a la norma COVENIN, no así para SERNAPESCA, la cual establece que ésta no debe encontrarse. Las BPH en las marcas A y B pertenecían principalmente a la familia Enterobacteriaceae, con porcentajes de 65,38 y 55,55, respectivamente, mientras que en C se observó igual proporción de enterobacterias y bacilos Gram negativos no fermentadores de la glucosa (BGNNFG), 42,85%. No se detectaron concentraciones de histamina e histidina. En conclusión las marcas A y B, presentaron una deficiente calidad bacteriológica, posiblemente debido al proceso de desmenuzado manual. La presencia de BPH sugiere contaminación post-cocción durante el desmenuzado. | es_VE |

dc.description.abstract1 | The objective of this study was to determine bacteriological quality and histamine content in three commercial brands (A, B, C) of minced pre-cooked fish available in Maracaibo. 42 samples were analyzed (14 of each brand). Total coliforms (TC), Escherichia coli (EC), aerobic mesophilic plate count (AMPC), and psycrophilic microorganism (PM), were determined according to COVENIN standards. Histamine producing bacteria (HPB) using Niven´s method modified by Yoshinaga, and Histamine and Histidine concentration by High Performance Liquid Chromatography were utilized. AMPC value varied between 4.7 and 7.6 log CFU/g. PM varied between 5.6 y 7.9 log CFU/g. When comparing results obtained with established values by COVENIN and SERNAPESCA norms, it was observed that brands A and B were higher than permissible limits. TC count varied between 2.3 y 2.8 log MPN/g, all brands had higher values than those established by SERNAPESCA. Regarding EC, in brands A and B Escherichia coli strains were isolated, while in brand C this microorganism was not detected. When compared with COVENIN norms, obtained values were lower, while SERNAPESCA established that Escherichia coli should not exist. Concentrations of histamine and histidine were not detected. HPB in brands A and B were mostly Enterobacteriaceae with percentages between 65.38 and 55.55%, respectively, while in brand C similar percentages of enterobacteria and Gram-negative non-glucose fermentating bacilli (42.85%) were detected. It was concluded that brands A and B had low bacteriological quality. The presence of HPB suggests post-cooking contamination. | es_VE |
