Comparación morfométrica y de los rendimientos cárnicos de dos especies piscícolas continentales criadas en el estado Trujillo, Venezuela

Se realizó un estudio comparativo de la morfometría y los rendimientos cárnicos de dos especies piscícolas continentales, cachama (Colossoma macropomum) y tilapia nilotica (Oreochromis niloticus) variedad Chitralada, producidas en condiciones intensivas en el estado Trujillo, Venezuela, mediante un diseño totalmente aleatorizado.
Se determinaron las variables morfométricas concernientes a longitud total (LT), longitud estándar (LS), longitud de cabeza (LC), altura de cabeza (AC), longitud del tronco (LTr), espesor del tronco (ET). Las relaciones morfométricas medidas fueron: longitud de cabeza/altura de cabeza (LC/AC), longitud de cabeza/longitud estándar
(LC/LS), longitud de cabeza/longitud total (LC/LT), longitud del tronco/espesor del tronco (LTr/ET), longitud del tronco/longitud estándar (LTr/LS), longitud estándar/longitud total (LS/LT). Las variables cárnicas evaluadas fueron el rendimiento de la canal (%RC), rendimiento del filete (%RFi) y los desperdicios (%R). Los parámetros
morfométricos y las variables de peso mostraron diferencias significativas a favor de C. macropomum (P<0,05) a excepción de ET. Las relaciones morfométricas exhibieron diferencias significativas (P<0,05), aunque la tilapia Chitralada mostro una tendencia favorables en LC/LT (0,26), LS/LT (0,84), LTr/LS (0,71) indicando una mejor
conformación de la porción del filete en relación al tamaño corporal. Las variables cárnicas (%RC, %RFi y %R) mostraron diferencias (P<0,05) lo que se vio influenciado por la especie. El %R fue mayor en tilapia en relación al encontrado para la cachama.

Morphometric relations measured were: head length/head height (LC/AC), head length/standard length (LC/LS), head length/total length (LC/LT), body longitude/body thickness (LTR/ET), body longitude/standard length (LTr/LS), standard length/total length (LS/LT). The carcass yield (%RC), fillet yield (%RFi) and waste (%R) was determined as beefing variables. The morphometric parameters and weight variables showed significant differences in favor of C. macropomum (P<0,05) except for ET. Morphometric relations showed significant differences (P<0,05), although the Chitralada strains showed a favorable trend in LC/LT (0,26), LS/LT (0,84), Ltr/LS (0,71) indicating forming a filleting in relation to body size. The %Fi and %R showed differences (P<0,05), which was influenced by the species. The percentage values of 7,78 %R were numerically more abundant in tilapia (52,04% vs 44,26%). In the RC% no statistical differences (P>0,05) for fish species. |
