Abstract
La caña de azúcar fue introducida en Venezuela en las primeras décadas del siglo XVI. Tuvo una amplia pero lenta difusión y en el siglo XVIII se organizó un importante número de haciendas de trapiche, en las cuales se elaboraban diversos derivados, tanto endulzantes como embriagantes, que fueron consumidos de manera distinta por los diferentes estamentos de la sociedad colonial. En el siglo XIX se mantuvieron algunas de estas formas de consumo diferenciado, a las que se incorporaron nuevos productos, con usos que dieron lugar a significados distintivos dentro de la estructura social.

| Resumen en otro Idioma | Sugar cane was introduced to Venezuela in the first decades of the 16th century. It had a wide but slow diffusion and in the 18th century an important number of haciendas de trapiche (sugar cane mill estates) were organized, in which various derivatives were made, both sweeteners and intoxicants, which were consumed in different ways by the different levels of colonial society. In the 19th century, some of these forms of differentiated consumption were maintained to which new products were incorporated, with uses that gave rise to distinctive meanings within the social structure. |
