dc.description.abstract | La yuca (Manihot esculenta Cranzt) es el tubérculo de mayor producción en Venezuela. En este trabajo se obtuvieron harinas a partir del tubérculo sometido a cuatro
tipos de procesamientos (H1: deshidratación directa, H2: fermentación, H3: fermentación-cocción, H4: cocción), posteriormente se evaluaron sus propiedades funcionales
y microestructura. Finalmente, se formularon panes y evaluaron los prototipos instrumentalmente por análisis de perfil de textura (APT) y sensorialmente por perfil
rápido (“Flash Profile”). Los gránulos de almidón de las harinas libres de tratamiento térmico (H1 y H2) mantuvieron la forma esférica, estas harinas presentaron
capacidad de formación de espuma y actividad de emulsión (por debajo del 5%). H1 y H2 presentaron la mayor concentración mínima de gelificación (30%), seguidas por H4
y H3 (16% y 10% respectivamente). La evaluación sensorial mostró una mayor cantidad de atributos sensoriales deseados en el pan formulado con H1, por lo que se
seleccionó esta harina para mejorar el pan, modificando la cantidad de emulsificante en la receta. El APT coincidió con lo obtenido sensorialmente. Sin embargo, al
variar la cantidad de emulsificante, el APT no logró discriminar entre los panes formulados con 3,3% y 6,5% de emulsificante, mientras que la metodología sensorial de
perfil rápido sí. En conclusión, la harina H1 mostró gran potencial para la formulación de panes libres de gluten.

dc.description.abstract1 | Cassava (Manihot esculenta Cranzt) is the tuber with the highest production in Venezuela. In this work, flours were obtained from the tuber subjected to four types of
processing (H1: direct dehydration, H2: fermentation, H3: fermentation-cooking, H4: cooking), subsequently their functional and microstructure properties were
evaluated. Finally, breads were formulated and the prototypes were evaluated instrumentally by texture profile analysis (TPA) and sensorially by Flash Profile. The
starch granules of flours without heat treatment (H1 and H2) maintained their spherical shape. These flours had foaming and emulsifying capacity below 5%. H1 and H2
presented the highest minimum gelation concentration (30%), followed by H4 and H3 (16% and 10% respectively). The sensory evaluation showed a greater amount of desired
sensory attributes in the bread formulated with H1, so this flour was selected to improve the bread, modifying the amount of emulsifier in the recipe. The APT
coincided with what was obtained sensorially. However, by varying the amount of emulsifier, the APT was unable to discriminate between breads formulated with 3.3% and
